Roasted Lemon & Herb Chicken

Who doesn't love Chicken?
I know I love it because honestly it's sometimes the easiest meal to fix when you're in a pinch and lack both time, energy and when you're battling with a near empty fridge.
One of the things I love about Chicken is that you can do so many things with it. You can fry it, grill it, roast it etc. and there are so many ingredients you can add to it to make it delicious! Plus chicken can be reasonably inexpensive.
Now last week I was at my local grocery store and I had no idea what to make for dinner and I was gazing at some boneless, skinless chicken breasts figuring I could make them up for supper when my mother grabbed a package of two bone in whole chicken breasts for less than the cost of the two flimsy looking counterparts I was previously contemplating buying.
Once the buying was out of the way I had to figure out what to do with my chicken breast and after perusing some recipes I just went with my gut (haha) and what was in my fridge and cupboards and ended up with this tasty dish!
Roasted Lemon & Herb Chicken

Serves 2
 1 bone in whole chicken breast skinned
Juice of 1 whole lemon
1 whole lemon sliced into quarters
1 small to medium sweet onion
4 cloves of garlic
1 tsp of paprika
1-2 tsp of Oregano (more or less depending on your preference
1/4 cup of Extra Virgin Olive Oil
Salt & Pepper to taste
1. Skin and de-bone chicken breast. It's cheaper to do it yourself at home than pay for it in stores. Use knife to make small incisions in the chicken breast for the marinade to better infuse the chicken.
2. Slice half of the sweet onion in medium sized chunks and place in the bottom of the casserole dish.
3. Dice remaining half of onion along with garlic into small chunks.
4. Place chicken breast in casserole dish with the quartered lemon.
5. In a bowl whisk together juice of 1 whole lemon along with diced onion, garlic, paprika, oregano, salt and pepper and Extra Virgin Olive Oil.
6. Pour mixture over the chicken breast and use your hands to rub the marinade into the chicken, ensuring some herbs, spices, onions and garlic get into the incisions made previously.
7. Cover and place in oven at 375°F for 1 hour and 15 minutes.
8. Serve and Enjoy!
