Italian Seasoned Snow Peas

Sometimes coming up with a tasty veggie side dish can be the hardest thing especially when all you have in your crisper is a small package of snow peas. Plus having a veggie-phobic partner can make this even more difficult. So when in doubt, take a trip to Italy. Even if it's only due to the flavours and this one will go over big with the carnivores in your family. Mr. Turning the Pages loved it and wanted seconds which is high praise coming from a man who tried to tell me steak is it's own food group.

Ingredients:
Serves 2
 
2 handfuls of fresh (Organic if possible) Snow Peas
2 tsps Butter
2 cloves of garlic, diced
2 tablespoons of water (more if you see need it)
1 tablespoon of Extra Virgin Olive Oil
Juice of one whole lemon
1 teaspoon of Italian seasoning
Kosher or Sea Salt and black pepper to taste
 
Steps:
 
1. Melt butter on medium heat in a large saucepan.
2. Add garlic and stir in the butter.
3. Add the rest of the ingredients and stir until the snow peas are a lovely bright green colour about 2-5 minutes on medium heat adding extra water if needed.
4. Serve and Enjoy!

  2. Love your new cooking blog! My hubby grew snow peas in our Veggie garden last summer and they were fabulous so am always looking for creative ways to cook them!!
    They were also great raw with a dip...especially in summer..
